A Cinco de Mayo Food Fiesta

Celebrating Cinco de Mayo with some tasty "Tex-Mex" favorites.

Cinco de Mayo, The 5th of May, has arrived.  So I am dedicating today solely to celebration ideas with food.  If you are not familiar with the holiday, Cinco de Mayo is a Mexican holiday that celebrates a battle victory over France in 1862.  It has evolved into quite a celebration of both pride and unity for those of Mexican descent.  However, much like St. Patrick’s Day, you do not have to be Mexican to join in the festivities. From a busy mother standpoint, it is yet another easy holiday to prepare for, which is why I do so each year. My kids love it primarily because it highlights their favorite foods and they can beat a piñata with a stick, (my son learned the word “beat” this weekend and since he has been using it quite frequently, he…
