RECIPE OF THE WEEK (6/6/13)

Phil’s Fresh Stir Fry

Prep and cook time: 30 min, serves 4

Ingredients:

1 package fresh Lo-mein or dried Canton noodles

1 oz vegetable, sesame or coconut oil.

1 bunch spring onions (dice top greens finely for garnish, and rough chop bulb for cooking)

1 TBS brown sugar

3 cloves garlic, minced or smashed

1 bunch Hakurei salad turnips, halved and sliced. Rough chop turnip greens.

1 bunch Swiss chard (separate stem from leaves, dice stem and chop greens)

1 Zucchini, quartered and sliced

½ tsp ground ginger or 1 oz fresh

3 TBS Soy sauce

2 TBS Oyster sauce

Directions:

  • Boil water for noodles.  Add a dash of salt and oil to water to season and prevent from sticking.
  • Prepare all ingredients
  • Heat sauté pan and add oil, do not let the oil burn.
  • Add chopped spring onion bulbs, Swiss chard stem, and brown sugar and cook for 5 mins on medium/ high, stirring so onions don’t burn.
  • If noodles are fresh take them out and reserve and if dried follow package instructions.
  • Add garlic and Hakurei and cook for a minute.
  • Add a spoon or two of water to noodles to break up a little if they have sat. Add noodles to sauté/ wok and cook and stir until moisture is out if water is added.
  • Add zucchini, Swiss chard, some of your reserved spring onion top, and ginger.
  • Mix in soy sauce and oyster sauce.
  • Garnish with diced green onion top. Serve.

Possible variations: Try different veggies, add your favorite chopped nuts, or a tsp of peanut or butter, cilantro and lime for a Pad Thai like noodle dish.  Add chicken, shrimp, beef, pork or your favorite Jordan Brothers seafood.

Side note: If meat is added, you should begin with that and reserve before you add your spring onions, Swiss chard, and brown sugar. Also less oil may be required.
